Vegetable rice – Very easy and quick to make

Vegetable Rice Recipe

Servings: 4 | Prep Time: 10 mins | Cook Time: 20 mins | Total: 30 mins

Ingredients

2 cups basmati rice (or long-grain rice), rinsed and soaked for 15 mins

3 ½ cups water (or vegetable broth for extra flavor)

2 tbsp oil or ghee

1 medium onion, finely chopped

2 cloves garlic, minced

1 tsp ginger, grated (optional)

1 cup mixed vegetables (carrots, peas, green beans, corn, bell pepper)

1 tomato, finely chopped

½ tsp turmeric powder

1 tsp cumin seeds (or ½ tsp ground cumin)

Salt, to taste

Fresh coriander leaves, chopped (for garnish)

Optional: ½ tsp garam masala for an Indian twist
