6 bell peppers (any color), tops cut off & seeds removed
1 lb ground beef (or ground turkey)
1 cup cooked rice (white or brown)
1 can (15 oz) diced tomatoes
1 small onion, finely chopped
2 garlic cloves, minced
1 tsp Italian seasoning
½ tsp paprika
Salt & pepper, to taste
1 cup shredded mozzarella or cheddar cheese
2 tbsp olive oil
1 cup tomato sauce (for the baking dish)
