Instructions
1. Prep the Peppers
Preheat oven to 375°F (190°C).
Cut the tops off bell peppers and remove seeds/membranes.
Drizzle with olive oil and place in a baking dish (cut side up).
2. Make the Filling
In a skillet, heat olive oil over medium heat.
Cook onion until soft, then add garlic and sauté briefly.
Add ground beef and cook until browned. Drain excess fat.
Stir in diced tomatoes, cooked rice, Italian seasoning, paprika, salt, and pepper. Simmer for 5 minutes.
3. Stuff the Peppers
Spoon the beef mixture into each pepper.
Sprinkle cheese on top (or reserve some for later).
4. Bake
Pour tomato sauce into the bottom of the baking dish.
Cover with foil and bake 30 minutes.
Remove foil, add more cheese if desired, and bake an additional 10 minutes, until cheese melts and peppers are tender.
5. Serve
Garnish with fresh parsley or basil.
Serve with crusty bread or a side salad.
