“Southern Soul Food Plate: BBQ Chicken, Seasoned Rice, Collard Greens & Cornbread”

Ingredients:

1 lb fresh collard greens (washed & chopped)

4 cups chicken broth

1 smoked turkey leg or 3 strips bacon

1 onion, chopped

2 cloves garlic, minced

1 tbsp apple cider vinegar

½ tsp red pepper flakes

Salt & pepper, to taste

Instructions:

In a large pot, cook smoked turkey or bacon until browned.

Add onion and garlic, sauté until fragrant.

Add collard greens and broth. Stir well.

Cover and simmer for 45 minutes–1 hour, until greens are tender.

Stir in vinegar and season to taste.
