Pinto Beans With Mexican-Style Seasonings

Description
Tender pinto beans simmered with onion, garlic, tomatoes, and warm Mexican spices. The result is a flavorful, comforting pot of beans perfect as a side dish, taco filling, or served over rice.


Ingredients

  • 1 pound dried pinto beans, rinsed

  • 6 cups water or broth

  • 1 medium onion, diced

  • 3 cloves garlic, minced

  • 1 can (10 oz) diced tomatoes with green chiles (Rotel style)

  • 1 teaspoon ground cumin

  • 1 teaspoon chili powder

  • 1 teaspoon smoked paprika

  • 1 teaspoon oregano

  • 1 bay leaf

  • 1 teaspoon salt (add at end)

  • ½ teaspoon black pepper

  • Optional: 1 jalapeño, diced

  • Optional: chopped cilantro for serving

  • Optional: lime juice to finish
