BBQ Mexican Brown Rice Bake

When my sister served this at a backyard BBQ, it was gone before she even set the last tray on the table. Everyone loved it so much that guests lined up asking her for the recipe! It’s smoky, cheesy, and full of bold Mexican flavors—a guaranteed crowd-pleaser.

Ingredients:

2 cups cooked brown rice

1 lb (450 g) ground beef (or ground turkey)

1 small onion, diced

1 red bell pepper, chopped

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn kernels, drained

1 can (15 oz) diced tomatoes (with juices)

1 cup barbecue sauce (smoky or sweet style)

1 teaspoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and black pepper, to taste

2 cups shredded cheddar or Mexican blend cheese

Fresh cilantro, chopped (for garnish)

Optional toppings: sour cream, sliced jalapeños, avocado
