Instructions:
Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
In a skillet, cook the ground beef until browned. Drain excess fat. Add onion, bell pepper, and garlic; cook until softened.
Stir in chili powder, cumin, paprika, salt, and pepper. Add beans, corn, diced tomatoes, barbecue sauce, and cooked rice. Mix well until heated through.
Transfer to the baking dish and spread evenly. Top generously with shredded cheese.
Bake for 20–25 minutes, until cheese is melted and bubbly.
Garnish with cilantro and serve hot with optional toppings.
