Ingredients
1 lb (450 g) ground beef (or ground turkey/chicken)
1 small onion, diced
2 cloves garlic, minced
1 (1 oz) packet taco seasoning (or homemade mix)
1 (15 oz) can black beans, rinsed and drained
1 (15 oz) can corn, drained
1 (10 oz) can diced tomatoes with green chilies (Rotel style)
1 cup salsa
2 cups shredded cheddar cheese (or Mexican blend)
8–10 small flour or corn tortillas
½ cup sour cream (optional for serving)
Fresh cilantro, chopped (for garnish)
