Mexican Tortilla Casserole

Instructions

Preheat Oven:
Preheat your oven to 375°F (190°C).

Cook the Meat:
In a large skillet, cook ground beef over medium heat until browned.
Add onion and garlic, sauté for 2–3 minutes.
Drain excess grease.

Season & Mix:
Stir in taco seasoning, black beans, corn, diced tomatoes, and salsa.
Simmer for 5 minutes to blend flavors.

Assemble the Casserole:

Grease a 9×13-inch baking dish.

Place a layer of tortillas (tear them to fit).

Spread a portion of the meat mixture over tortillas.

Sprinkle cheese on top.

Repeat layers (tortillas → meat → cheese) until all ingredients are used, finishing with cheese.

Bake:
Cover with foil and bake for 20 minutes.
Remove foil and bake for 10 more minutes, until cheese is bubbly and golden.

Serve:
Let it cool for 5 minutes. Slice into squares.
Garnish with cilantro and serve with sour cream.
