Ingredients (Serves 6)
2 tbsp olive oil
1 onion, diced
2 carrots, diced
2 celery stalks, diced
3 garlic cloves, minced
1 can (15 oz) diced tomatoes
6 cups vegetable broth (or chicken broth)
1 can (15 oz) cannellini beans, drained & rinsed
1 can (15 oz) kidney beans, drained & rinsed
1 ½ cups small pasta (like ditalini or elbow macaroni)
1 tsp dried oregano
1 tsp dried basil
½ tsp dried thyme
Salt & pepper to taste
2 cups fresh spinach (or kale)
Parmesan cheese, for topping (optional)
