Hearty One-Pot Pasta and Bean Soup”

Instructions
1. Sauté the Veggies

Heat olive oil in a large pot over medium heat.

Add onion, carrots, and celery. Cook for 5-6 minutes until softened.

Stir in garlic and cook for 30 seconds.

2. Build the Base

Add diced tomatoes, broth, oregano, basil, and thyme.

Bring to a boil, then reduce to a simmer for 10 minutes.

3. Add Beans & Pasta

Stir in beans and pasta.

Cook uncovered for 10-12 minutes, until pasta is al dente.

4. Finish

Add spinach and stir until wilted.

Season with salt and pepper to taste.

5. Serve

Ladle into bowls and top with grated Parmesan and a drizzle of olive oil if desired.

Serve with crusty bread for dipping.

Tips & Variations

Use whole wheat pasta for extra fiber.
Add cooked sausage or bacon for a heartier version.
For a creamy twist, stir in ½ cup heavy cream or grated Parmesan at the end.
