Back in the 1950s, this humble sandwich was a diner classic. Bologna (or “baloney”) was inexpensive, quick to cook, and downright delicious when pan-fried until crispy around the edges. Add some gooey cheese, toasted bread, and your favorite fixings, and you’ve got a nostalgic comfort food that still tastes amazing today.

Ingredients (makes 2 sandwiches)

4 slices of bologna (thick-cut works best)

4 slices of sandwich bread (white, rye, or sourdough)

2 slices American cheese (or cheddar/Swiss)

2 tbsp butter (softened)

1 tbsp yellow mustard (optional)

1–2 slices tomato (optional)

2 leaves crisp lettuce (optional)
