Toast the bread
Lightly butter each slice of bread and toast in a skillet until golden brown. Set aside.
Fry the bologna
Heat a skillet over medium heat. Score small cuts around the edges of each slice of bologna (to prevent curling). Fry until browned and slightly crispy, about 2–3 minutes per side.
Add cheese
Place a slice of cheese on top of the hot bologna while still in the skillet. Let it melt slightly.
Assemble the sandwich
Spread mustard on the toasted bread (if using). Layer fried bologna with cheese, tomato slices, and lettuce. Top with the second slice of bread.
Serve
Cut in half and enjoy warm – best with potato chips or a pickle on the side for that true diner feel.
Variations:
Swap in spicy mustard or mayo for the spread.
Add a fried egg on top for a breakfast-style version.
Use different cheeses like pepper jack for a little kick.
