½ cup breadcrumbs

1 large egg

¼ cup Parmesan cheese, grated

2 cloves garlic, minced

2 tbsp fresh parsley, chopped (or 1 tsp dried)

1 tsp Italian seasoning

½ tsp salt

½ tsp black pepper

4 oz mozzarella cheese (cut into ½-inch cubes)

2 tbsp olive oil (if pan-searing)
