Buttery Raspberry Crumble Cookies

Ingredients

½ cup (100 g) granulated sugar

½ cup (100 g) brown sugar, packed

1 large egg

1 tsp vanilla extract

2 cups (250 g) all-purpose flour

½ tsp baking powder

¼ tsp salt

½ cup raspberry jam (or your favorite fruit jam)

Crumble Topping:

½ cup (65 g) all-purpose flour

¼ cup (55 g) cold unsalted butter, cubed

¼ cup (50 g) granulated sugar
