Buttery Raspberry Crumble Cookies

Instructions

Make the Dough:

In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.

Beat in the egg and vanilla.

Mix in flour, baking powder, and salt until just combined.

Prepare Crumble:

In a small bowl, mix flour and sugar. Cut in cold butter with a fork or pastry cutter until mixture is crumbly.

Shape Cookies:

Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

Scoop dough into balls (about 1 ½ tablespoons each) and flatten slightly.

Make a small indentation in the center and fill with about ½ teaspoon of raspberry jam.

Add Crumble & Bake:

Sprinkle crumble topping over jam.

Bake for 12–15 minutes or until edges are golden.

Let cool on a wire rack.

Optional: Drizzle cooled cookies with white chocolate for an extra indulgent touch!
