Ingredients

For the sausages

  • 6–8 pork sausages (Cumberland or any good-quality sausage)

  • 1 tbsp oil or butter

For the mashed potatoes

  • 4–5 large potatoes, peeled and cubed

  • 4 tbsp butter

  • ½–1 cup milk or cream

  • Salt & pepper to taste

For the onion gravy

  • 2 tbsp butter

  • 2 large onions, thinly sliced

  • 2 garlic cloves, minced

  • 2 tbsp flour

  • 2 cups beef broth

  • 1 tbsp Worcestershire sauce

  • ½ tsp thyme (optional)

  • Salt & pepper to taste
