Instructions
1. Make the mashed potatoes

Boil potatoes in salted water for 12–15 minutes or until tender.

Drain, then mash with butter and milk/cream.

Add salt and pepper to taste.

Set aside.
2. Cook the sausages

Heat oil/butter in a skillet over medium.

Add sausages and cook 10–12 minutes, turning until browned and cooked through.

Remove and keep warm.
3. Make the onion gravy

In the same skillet, melt butter.
-
Add sliced onions and cook until caramelized (8–10 minutes).

Add garlic and cook 1 minute.

Sprinkle in flour and stir for 1 minute.

Slowly pour in beef broth while stirring.

Add Worcestershire sauce and thyme.
-
Simmer 5–7 minutes until thick and glossy.
-
Season with salt and pepper.
4. Assemble

Scoop mashed potatoes onto a plate.
-
Add sausages on top.
-
Pour hot onion gravy generously over everything.
