No-Bake Chocolate Eclair Cake

DESCRIPTION

A layered dessert made with graham crackers, silky vanilla pudding, whipped topping, and a rich chocolate glaze. The layers soften overnight, turning into a cake that’s creamy, light, and totally irresistible. No oven needed!


INGREDIENTS

Filling

  • 2 boxes (3.4 oz each) instant vanilla pudding

  • 3 cups cold milk

  • 1 tub (8 oz) whipped topping (Cool Whip), thawed

  • 1 tsp vanilla extract (optional)

Layers

  • 1 box graham crackers

Chocolate Topping

Option 1 — Homemade Chocolate Frosting (classic version):

  • 1 cup powdered sugar

  • 3 tbsp unsweetened cocoa powder

  • 2 tbsp butter, softened

  • 3 tbsp milk

  • 1 tsp vanilla extract

Option 2 — Easiest Version:

  • 1 can chocolate frosting (microwave 10 seconds to soften)
