No-Bake Chocolate Eclair Cake

INSTRUCTIONS

1. Make the Filling

  1. In a large bowl, whisk together the pudding mix and cold milk.

  2. Whisk until thick.

  3. Fold in the whipped topping and vanilla extract.

  4. Set aside.


2. Layer the Dessert

  1. In a 9×13 dish, place a single layer of graham crackers on the bottom.

  2. Spread half of the pudding mixture over the crackers.

  3. Add another layer of graham crackers.

  4. Spread the remaining pudding mixture.

  5. Top with a final layer of graham crackers.


3. Make the Chocolate Topping

Homemade version:

  1. Mix powdered sugar, cocoa, butter, milk, and vanilla until smooth.

  2. Pour or spread over the top layer.

Store-bought frosting version:

  1. Microwave frosting 10 seconds.

  2. Pour evenly over the top.


4. Chill

Refrigerate at least 6 hours, but overnight is best — it makes the crackers soft and cake-like.


SERVE

Slice into squares and enjoy!
It tastes even better the next day.
