Cowboy Caviar
Description
Cowboy Caviar, also known as “Texas Caviar,” is a colorful and refreshing salad or dip made with beans, corn, fresh vegetables, and a tangy dressing. It’s hearty, healthy, and packed with bold Tex-Mex flavors. This versatile dish can be scooped up with tortilla chips as a party appetizer or served as a side with grilled meats, tacos, or even eaten straight from the bowl.
Ingredients
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) black-eyed peas, drained and rinsed
1 ½ cups corn kernels (fresh, frozen, or canned & drained)
1 red bell pepper, diced
1 green bell pepper, diced
1 jalapeño, finely chopped (remove seeds for less heat)
1 small red onion, diced
2 medium tomatoes, diced (or 1 cup cherry tomatoes, halved)
1 avocado, diced (add right before serving)
¼ cup fresh cilantro, chopped
For the Dressing:
⅓ cup olive oil
3 tbsp red wine vinegar (or lime juice for extra zing)
1 tbsp honey or sugar
1 tsp garlic powder
1 tsp chili powder
½ tsp cumin
Salt & black pepper, to taste
