Collard Greens with Smoked Meat & Fried Bread Dumplings
Ingredients:
2 lbs collard greens (washed, stems removed, chopped)
1 lb smoked turkey leg, ham hock, or smoked sausage
1 medium onion, chopped
3 cloves garlic, minced
4 cups chicken broth (or water + bouillon)
1 tsp black pepper
1 tsp red pepper flakes (optional)
2 tbsp apple cider vinegar
Salt, to taste
For Fried Bread Dumplings (optional):
1 cup flour
½ cup cornmeal
1 tsp baking powder
½ tsp salt
¾ cup buttermilk (or milk)
Oil, for frying
