Instructions:
1. Prepare the Meat & Broth
In a large pot, add smoked meat, onion, garlic, and chicken broth.
Bring to a boil, then simmer for 30–40 minutes until meat is tender and broth is flavorful.
2. Cook the Greens
Add the collard greens in batches. Stir and let them wilt down.
Season with black pepper, red pepper flakes, and vinegar.
Cover and simmer for 45 minutes to 1 hour until greens are tender.
3. Make the Fried Dumplings
Mix flour, cornmeal, baking powder, and salt in a bowl. Add buttermilk and stir into a thick batter.
Heat oil in a skillet and drop spoonfuls of batter. Fry until golden brown on all sides.
4. Combine & Serve
Add the fried dumplings into the greens during the last 10 minutes of cooking, so they soak up the flavor.
Serve hot with cornbread or white rice.
Tip: The longer the greens simmer, the deeper the flavor!
