8 oz (225 g) block of feta cheese, cut into ½-inch cubes
½ cup (120 ml) extra-virgin olive oil (or enough to fully cover the cheese)
2 cloves garlic, thinly sliced
1 teaspoon dried oregano (or 1 tablespoon fresh)
½ teaspoon crushed red pepper flakes (optional, for heat)
1 lemon, zested
4–5 sprigs fresh thyme or rosemary
Black pepper, to taste
