Prep feta:
Pat feta cubes dry with a paper towel to prevent excess moisture from diluting the marinade.
Layer in a jar:
In a clean glass jar, add feta cubes, garlic slices, lemon zest, and herbs, layering them evenly.
Add seasoning:
Sprinkle oregano, pepper flakes, and black pepper throughout the layers.
Cover with oil:
Pour olive oil over the feta until it’s completely submerged.
Gently tap the jar to release any air bubbles.
Marinate:
Seal the jar and refrigerate for at least 6 hours, preferably overnight, for maximum flavor.
Serve:
Bring to room temperature before serving for the best texture and flavor.
Use in salads, pasta, sandwiches, or as a stand-alone appetizer.
Storage Tip:
Marinated feta keeps in the fridge for up to 2 weeks, as long as it remains submerged in oil.
