Step 1: Make the Wonton Filling
In a bowl, combine pork, shrimp, green onions, soy sauce, sesame oil, ginger, garlic, salt, and white pepper. Mix well.
Step 2: Wrap the Wontons
Place 1 tsp filling in the center of a wonton wrapper.
Moisten the edges with water, fold into a triangle, and press to seal.
Bring the two triangle corners together and press to form a “boat” shape.
Step 3: Prepare the Broth
In a large pot, bring chicken broth, water, and ginger slices to a simmer.
Add soy sauce (and rice vinegar if using). Adjust seasoning to taste.
Step 4: Cook the Wontons
Bring the broth to a gentle boil.
Drop in wontons, a few at a time, and cook for 4–5 minutes, until they float and are cooked through.
Step 5: Add Greens & Serve
In the last 2 minutes of cooking, add bok choy or spinach.
Ladle soup into bowls, garnish with green onions, and drizzle with sesame oil.
