Directions:
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. In a medium saucepan, combine water, milk, butter, sugar, and salt. Bring to a boil over medium heat.
3. Add the flour all at once, stirring vigorously until the mixture forms a ball and pulls away from the sides of the pan. Cook for 1-2 minutes to remove excess moisture.
4. Transfer the dough to a mixing bowl and let cool for 5 minutes.
5. Add eggs one at a time, beating well after each addition until smooth and glossy.
6. Spoon or pipe small mounds of dough onto the prepared baking sheet.
7. Bake for 20-25 minutes, or until puffed and golden brown. Do not open the oven during baking.
8. Remove and cool completely on a wire rack.
9. For the filling, whip the cream, powdered sugar, and vanilla extract together until stiff peaks form.
10. Slice cooled puffs in half, pipe or spoon the cream inside, and place the tops back on.
11. Dust lightly with powdered sugar before serving.
