Instructions:
In a medium bowl, combine mayonnaise, Dijon mustard, and lemon juice. Mix until smooth.
Add the chicken, celery, and red onion. Stir to coat evenly with the dressing.
Season with salt and black pepper to taste. Add pickle relish if desired for a little sweetness and tang.
Chill in the refrigerator for at least 30 minutes before serving to let the flavors blend.
Serve on bread, in a croissant, with lettuce wraps, or alongside crackers.
Tip:
For extra texture and flavor, mix in chopped apples, grapes, or toasted pecans.
