Sweet chili jerk chicken thighs with mashed potatoes and broccolini

Instructions

1. Marinate the Chicken

In a bowl, combine jerk seasoning, sweet chili sauce, soy sauce, honey, garlic, lime juice, and olive oil.
Season chicken thighs with salt and pepper, then coat them in the marinade.
Rest at least 20 minutes, or refrigerate longer for deeper flavor.


2. Cook the Chicken

Oven:

  • Preheat to 400°F (205°C).

  • Arrange chicken on a baking sheet.

  • Bake 30–40 minutes until golden and cooked through.

  • Brush with extra sweet chili sauce during the last 10 minutes for a glossy finish.

Spoon creamy mashed potatoes onto the plate, add the roasted broccolini, and top with the sweet chili jerk chicken. Pour over any extra glaze from the pan.
