For 2 servings (1 large butternut squash):

 

1 large butternut squash, halved and seeded

 

1 ½ cups Brussels sprouts, halved

 

1 cup cubed butternut squash (from the same one or extra)

 

2 tbsp olive oil

 

1 tbsp maple syrup or honey

 

Salt and pepper, to taste

 

½ tsp cinnamon (optional, for warmth)

 

¼ cup dried cranberries

 

¼ cup chopped pecans or walnuts, toasted

 

½ cup feta cheese (or goat cheese for extra creaminess)
