STUFFED PEPPER CASSEROLE

Instructions:

  1. Preheat oven: Set to 375°F (190°C). Grease a 9×13-inch baking dish.

  2. Cook meat and veggies:
    In a large skillet, brown the ground beef over medium heat. Drain excess fat. Add onion, bell peppers, and garlic; cook until softened.

  3. Add sauce and rice:
    Stir in diced tomatoes, tomato sauce, cooked rice, Italian seasoning, paprika, salt, and pepper. Simmer for 5 minutes to blend flavors.

  4. Assemble:
    Pour the mixture into the prepared baking dish. Sprinkle cheese evenly over the top.

  5. Bake:
    Bake for 20–25 minutes, until cheese is melted and bubbly.

  6. Serve:
    Let rest 5 minutes before serving. Garnish with parsley if desired.


Optional Add-ins:

  • Add a pinch of red pepper flakes for heat.

  • Mix in corn or black beans for extra texture.

  • Top with extra cheese or crushed crackers for a crisp finish.
