Ingredients:

For the Dough:

  • 3 cups all-purpose flour

  • 2¼ teaspoons (1 packet) instant yeast

  • 2 tablespoons sugar

  • 1 teaspoon salt

  • 3 tablespoons melted butter or oil

  • ¾ cup warm milk (about 110°F / 43°C)

  • 1 egg (optional, for richer dough)

For the Filling (choose one or mix):
Option 1 – Chicken:

  • 1 cup cooked shredded chicken

  • 1 small onion, chopped

  • 1 clove garlic, minced

  • 2 tablespoons cream cheese or mayonnaise

  • Salt, pepper, and paprika to taste

Option 2 – Cheese & Veggie:

  • ½ cup shredded mozzarella or cheddar

  • ¼ cup sautéed spinach or bell peppers

  • Pinch of salt and oregano

For Brushing:

  • 1 egg yolk (beaten, for shine)

  • Sesame seeds or nigella seeds (optional)

Instructions:

  1. Prepare the dough:

    • In a large bowl, mix warm milk, sugar, and yeast. Let sit for 5 minutes until frothy.

    • Add melted butter, egg, salt, and flour gradually. Knead for 8–10 minutes until smooth and elastic.

    • Cover and let rise in a warm place for about 1 hour, or until doubled in size.

  2. Prepare the filling:

    • While dough rises, cook your chosen filling.

    • Let it cool completely before using.

  3. Shape the buns:

    • Punch down the dough and divide into 8–10 equal pieces.

    • Flatten each piece into a circle, place a spoonful of filling in the center, and pinch edges to seal.

    • Place seam-side down on a parchment-lined tray.

  4. Second rise:

    • Cover and let the buns rest for 20–30 minutes until puffy.

  5. Bake:

    • Preheat oven to 375°F (190°C).

    • Brush tops with beaten egg yolk and sprinkle with sesame seeds.

    • Bake for 15–18 minutes, until golden brown.

  6. Serve:

    • Brush with a little melted butter when hot for a soft shine.

    • Serve warm with ketchup, garlic dip, or just as they are!

Tips:

  • You can air fry them at 350°F (175°C) for 10–12 minutes.

  • For a sweet version, stuff with Nutella, jam, or cream cheese and dust with powdered sugar.
