Instructions
Preheat oven: Set to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
Cream butter & sugar: In a large bowl, beat softened butter and sugar until light and fluffy.
Add eggs & vanilla: Beat in eggs one at a time, then add vanilla.
Mix dry ingredients: In a separate bowl, whisk together flour, baking powder, and salt.
Combine: Add dry ingredients to the butter mixture alternately with milk, beginning and ending with flour. Mix until just combined.
Fold in strawberries: Gently fold in the floured strawberries.
Bake: Spread batter evenly in the pan. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
Cool & glaze (optional): Let bread cool 10 minutes before removing from the pan. If desired, drizzle with glaze once cooled.
Tips:
For extra flavor, add 1/2 tsp almond extract along with vanilla.
Try substituting half the strawberries with blueberries or raspberries for a mixed berry loaf.
Delicious toasted with a little butter or cream cheese!
