Instructions:
Boil sliced sweet potatoes until just tender (not mushy).
In a saucepan, melt butter and add sugars, spices, salt, and vanilla.
Pour the mixture over the sweet potatoes in a baking dish.
Bake at 375°F (190°C) for 25–30 mins, basting halfway.
Creamy Baked Macaroni & Cheese
Ingredients:
2 cups elbow macaroni
2 tbsp butter
2 tbsp flour
2 cups milk
2 cups shredded cheddar (plus more for topping)
1/2 cup mozzarella or Colby jack
Salt, pepper, garlic powder to taste
Instructions:
Cook pasta and drain.
In a pan, melt butter, whisk in flour, and slowly add milk to make a roux.
Add cheeses and seasonings to form a creamy sauce.
Mix sauce with pasta, pour into a baking dish, and top with extra cheese.
Bake at 375°F for 20 mins until bubbly and golden.
Southern Greens (Collards or Mixed Greens)
Ingredients:
1 lb collard greens (or mix with mustard/turnip)
1 smoked turkey wing or neck
1 chopped onion
3 cloves garlic
4 cups chicken broth
1 tbsp apple cider vinegar
Salt, black pepper, crushed red pepper (to taste)
Instructions:
Sauté onion and garlic. Add smoked meat and pour in broth.
Bring to boil, then simmer for 30 mins.
Add greens and cook for 45–60 mins until tender.
Season with vinegar, salt, and pepper to taste.
Honey Butter Jiffy Cornbread
Ingredients:
1 box Jiffy Corn Muffin Mix
1 egg
1/3 cup milk
2 tbsp honey
2 tbsp melted butter (plus extra for topping)
Instructions:
Mix all ingredients, pour into greased pan or muffin tin.
Bake at 400°F (200°C) for 15–20 mins.
Brush with extra honey butter while warm.
Plating Tip:
Serve everything hot. Drizzle extra buffalo sauce over the catfish and serve with a wedge of lemon. Don’t forget a tall glass of sweet tea or lemonade on the side!
