Smothered Sausage & Potatoes Bake

Instructions

Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

Cook the sausage:
In a skillet over medium heat, sauté sliced sausage until lightly browned. Remove and set aside.

Sauté onions and peppers:
In the same skillet, add butter. Once melted, sauté onion and bell pepper until tender. Sprinkle flour over the mixture and stir for 1 minute.

Make the sauce:
Gradually whisk in milk and cook until thickened (about 3–4 minutes). Stir in cheese, garlic powder, paprika, salt, and pepper.

Assemble the bake:
Layer half the sliced potatoes in the prepared dish. Add half the sausage and pour some sauce over it. Repeat the layers and finish with remaining sauce and extra cheese on top.
