Instructions
1. Season & Sear the Pork Chops
Pat pork chops dry and season both sides with seasoned salt, black pepper, paprika, and garlic powder.
Heat oil in a large skillet over medium-high heat.
Sear pork chops for 2–3 minutes per side until golden brown (do not fully cook). Remove and set aside.
2. Prepare the Onions & Potatoes
In the same skillet, add butter and sliced onions. Cook until softened and lightly caramelized (4–5 minutes).
Sprinkle flour over onions and stir for 1 minute to make a roux.
Slowly whisk in chicken broth until smooth. Add heavy cream if using.
3. Assemble & Cook
Place sliced potatoes in the bottom of a greased baking dish or deep skillet.
Pour half the onion gravy over potatoes.
Arrange pork chops on top, then cover with remaining gravy.
Cover with foil and bake at 350°F (175°C) for 50–60 minutes, or until pork chops are tender and potatoes are cooked through.
4. Serve
Spoon potatoes and gravy onto plates, then top with pork chops.
Garnish with parsley and extra pepper if desired.
Tips & Variations
Skillet version: Cook everything in a large deep skillet on low heat for about 45 minutes, stirring occasionally.
Add mushrooms or bell peppers for extra flavor in the gravy.
Make ahead: This dish reheats beautifully for meal prep.
