Shepherd’s Pie Baked Potato Recipe

Description

A fluffy baked potato stuffed with savory ground meat, vegetables, and rich gravy, then topped with creamy mashed potatoes and baked until golden. Perfect for dinner or meal prep!

Ingredients (Serves 4)
For the Baked Potatoes

4 large russet potatoes

2 tbsp olive oil

Salt, to taste

For the Filling

500 g (1 lb) ground beef or lamb (traditional for shepherd’s pie)

1 medium onion, finely chopped

2 garlic cloves, minced

1 carrot, diced small

½ cup frozen peas

1 tbsp tomato paste

1 tsp Worcestershire sauce

½ cup beef broth

Salt and pepper, to taste

Fresh thyme or rosemary (optional)

For the Mashed Potato Topping

2 cups leftover mashed potatoes or mash the scooped-out potato flesh with:

2 tbsp butter

2–3 tbsp milk

Salt & pepper

Optional Toppings

Shredded cheddar cheese

Chopped parsley
