Shepherd’s Pie Baked Potato Recipe

Ingredients (Serves 4)
For the Baked Potatoes
4 large russet potatoes
2 tbsp olive oil
Salt, to taste
For the Filling
500 g (1 lb) ground beef or lamb (traditional for shepherd’s pie)
1 medium onion, finely chopped
2 garlic cloves, minced
1 carrot, diced small
½ cup frozen peas
1 tbsp tomato paste
1 tsp Worcestershire sauce
½ cup beef broth
Salt and pepper, to taste
Fresh thyme or rosemary (optional)
For the Mashed Potato Topping
2 cups leftover mashed potatoes or mash the scooped-out potato flesh with:
2 tbsp butter
2–3 tbsp milk
Salt & pepper
Optional Toppings
Shredded cheddar cheese
Chopped parsley
