Sausage, Peppers & Onions

Instructions

1. Brown the Sausages

  1. Heat olive oil in a large skillet.

  2. Add the sausage links and brown on all sides (about 5–7 minutes).

  3. Remove from the skillet and set aside (they’ll finish cooking later).


2. Cook the Peppers & Onions

  1. In the same skillet, add sliced onions and peppers.

  2. Cook until softened, about 6–8 minutes.

  3. Add garlic and cook 1 minute more.


3. Make the Sauce

  1. Add tomato sauce (or crushed tomatoes), chicken broth (or wine), and Italian seasoning.

  2. Stir well and let it simmer.


4. Combine Everything

  1. Slice the sausages into thick pieces OR leave them whole.

  2. Add them back to the skillet and nestle into the peppers.

  3. Cover and simmer for 15–20 minutes, until the sausages are cooked through and the sauce thickens.


5. Serve

Serve the sausages and peppers:

  • in hoagie rolls

  • over pasta

  • with rice

  • or just on a plate with crusty bread

Top with fresh basil or parsley if you like.


Tips

  • Use hot Italian sausage for a spicy version.

  • Add mushrooms for more richness.

  • Add a splash of balsamic vinegar at the end for extra depth.
