Saucy Beef and Vegetable Casserole

Instructions

Preheat oven:

Set oven to 375°F (190°C). Lightly grease a 9×13-inch casserole dish.

Cook the beef:

In a large skillet, brown ground beef over medium heat until no longer pink. Drain excess fat.

Add vegetables:

Stir in onion, garlic, carrots, bell pepper, and zucchini. Cook until softened, about 5 minutes.

Make the sauce:

Add crushed tomatoes, tomato paste, beef broth, Worcestershire sauce, herbs, paprika, salt, and pepper.

Simmer for 10 minutes until sauce thickens slightly. Stir in peas (or corn).

Assemble casserole:

Spread a thin layer of sauce in the bottom of the dish.

If using pasta or rice, spread it evenly in the dish.

Pour the saucy beef and vegetable mixture over the top.

Sprinkle generously with shredded cheese.

Bake:

Bake uncovered for 20–25 minutes, until cheese is melted and bubbly.

Serve:

Let rest 5 minutes before serving. Garnish with fresh parsley if desired.

Tips & Variations:

Make it extra creamy: stir in ½ cup sour cream or cream cheese into the sauce before baking.

Use different proteins: swap ground beef for ground turkey, chicken, or sausage.

Add potato topping: instead of cheese, spread mashed potatoes on top for a shepherd’s pie twist.
