Preheat Oven:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it. -
Prepare the Potatoes:
Wash and dry the potatoes thoroughly, then cut them into even pieces for even cooking. -
Season:
In a large bowl, toss the potatoes with olive oil, minced garlic, salt, pepper, Italian seasoning, and half of the Parmesan cheese. Mix until evenly coated. -
Roast:
Spread the potatoes out in a single layer on the baking sheet, cut side down. Roast for 25–35 minutes, turning halfway through, until golden brown and crispy. -
Finish:
Remove from oven and sprinkle the remaining Parmesan cheese over the hot potatoes. Garnish with chopped parsley before serving.
Tips

For extra crispiness, don’t overcrowd the baking sheet — use two pans if necessary.

Add a squeeze of lemon or a drizzle of melted butter before serving for a rich finish.
