For the beef & gravy:
2 lbs beef stew meat (or chuck roast, cut into chunks)
2 tbsp vegetable oil
1 medium onion, diced
3 garlic cloves, minced
3 cups beef broth
1 tbsp Worcestershire sauce
2 tbsp tomato paste
2 tbsp all-purpose flour (or cornstarch for gluten-free)
2 tbsp unsalted butter
1 tsp dried thyme (or 2 sprigs fresh)
2 bay leaves
Salt & black pepper, to taste
For the mashed potatoes:
3 lbs russet or Yukon Gold potatoes, peeled and cubed
1/2 cup unsalted butter
1 cup whole milk (or heavy cream for richer mash)
