Instructions
Cook sweet potatoes quickly:
Pierce each potato several times with a fork.
Place on a microwave-safe plate and microwave on High for 8–12 minutes, turning halfway, until tender.
Prepare filling:
Cut a slit lengthwise in each potato and scoop most of the flesh into a bowl.
Mash with butter, sour cream, salt, and pepper.
Stir in half the bacon and half the cheese.
Stuff & melt:
Spoon the mixture back into potato skins.
Top with remaining cheese and bacon.
Final melt:
Place under the oven broiler for 2–3 minutes until cheese is bubbly and golden (or microwave for 1–2 minutes if you’re in a real rush).
Serve: Garnish with green onions and extra sour cream. Serve hot.
Extra time-saver: Use store-bought pre-cooked bacon and pre-shredded cheese so you can go from start to table in under 25 minutes.
