1. Cook the Chorizo
Heat a skillet over medium heat.

Add onion, jalapeño, and garlic. Cook until softened.
Drain excess grease if needed.

Preheat oven to 400°F (205°C).
In a small oven-safe skillet or baking dish, layer the cooked chorizo mixture.
Top with the shredded cheeses, mixing them lightly.
3. Bake
Bake for 10–12 minutes, or until the cheese is fully melted, bubbling, and slightly golden around the edges.
4. Serve Immediately
Serve hot with warm flour tortillas, corn tortillas, or tortilla chips.
