Instructions
1. Prep the potatoes

If using baby potatoes, halve them.

Parboil for 7–8 minutes until slightly tender but not fully cooked.
This step ensures everything cooks evenly.
2. Cook the sausage

Heat 1 tbsp olive oil in a large skillet.

Add sliced sausage and cook 4–5 minutes until browned.

Remove and set aside.
3. Sauté the vegetables

Add another 1 tbsp olive oil to the skillet.

Add onions and cook until soft.

Add garlic, cook 30 seconds.

Add the parboiled potatoes and season with paprika, Italian seasoning, salt, and pepper.

Cook 8–10 minutes, stirring occasionally, until golden.
4. Add green beans

Add the green beans to the skillet, stir, and cook 5–6 minutes until crisp-tender.
5. Bring it together

Return the sausage to the skillet.

Stir everything together and cook 2–3 minutes more so the flavors blend.
Optional finishing touches

Squeeze a little lemon over the top for brightness.

Sprinkle fresh parsley.
