Potatoes & Green Beans with Sausage

Instructions

1. Prep the potatoes

  • If using baby potatoes, halve them.

  • Parboil for 7–8 minutes until slightly tender but not fully cooked.
    This step ensures everything cooks evenly.

2. Cook the sausage

  • Heat 1 tbsp olive oil in a large skillet.

  • Add sliced sausage and cook 4–5 minutes until browned.

  • Remove and set aside.

3. Sauté the vegetables

  • Add another 1 tbsp olive oil to the skillet.

  • Add onions and cook until soft.

  • Add garlic, cook 30 seconds.

  • Add the parboiled potatoes and season with paprika, Italian seasoning, salt, and pepper.

  • Cook 8–10 minutes, stirring occasionally, until golden.

4. Add green beans

  • Add the green beans to the skillet, stir, and cook 5–6 minutes until crisp-tender.

5. Bring it together

  • Return the sausage to the skillet.

  • Stir everything together and cook 2–3 minutes more so the flavors blend.

Optional finishing touches

  • Squeeze a little lemon over the top for brightness.

  • Sprinkle fresh parsley.


Tips

  • Swap green beans for broccoli or bell peppers.

  • Use spicy sausage for more heat.

  • Add a drizzle of honey mustard for a sweeter glaze.
