Make the mixture: In a bowl, combine sausage, soaked bread, egg, Parmesan, parsley, and garlic. Season with salt and pepper. If the mixture is too soft, add a bit of breadcrumbs.
Shape the meatballs: With damp hands, roll into small balls, about the size of a walnut.
Cook:
Pan-fry: Heat olive oil in a skillet and fry meatballs until browned and cooked through.
Bake: Place on a parchment-lined baking sheet, drizzle with oil, and bake at 400°F (200°C) for 20–25 minutes, turning halfway.
Serve: Enjoy hot on their own, or simmer them in a tomato-basil sauce for a more traditional dish.
