Instructions
Roast the Chicken:
Preheat the oven to 200°C (400°F).
In a bowl, toss the drumsticks with olive oil, paprika, garlic powder, onion powder, thyme, salt, and pepper.
Arrange on a baking sheet lined with parchment paper.
Roast for 35–40 minutes, flipping halfway, until golden and cooked through (internal temp 75°C / 165°F).
Make the Mashed Potatoes:
Boil potatoes in salted water until tender (about 15–20 minutes).
Drain and mash with butter and warm milk.
Season with salt and pepper to taste until smooth and creamy.
Prepare the Salad:
In a bowl, combine cucumber, tomatoes, and red onion.
Drizzle with olive oil and lemon juice, then season with salt and pepper.
Toss and top with chopped parsley if desired.
Serve:
Plate the mashed potatoes, top with roasted chicken drumsticks, and serve with a side of the crisp cucumber-tomato salad.
