Shrimp, Corn, Potato & Smoked Sausage Foil Pack

Instructions:

Preheat the oven or grill:
Preheat your oven to 400°F (200°C) or your grill to medium-high heat.

Prepare the ingredients:
Boil the baby potatoes for 10 minutes until just tender. Drain and set aside.

Mix the seasoning:
In a large bowl, combine melted butter, olive oil, minced garlic, paprika, cayenne (if using), Old Bay, salt, and pepper.

Toss everything together:
Add shrimp, potatoes, corn, and sausage to the bowl. Toss until everything is well coated in the buttery seasoning mix.

Assemble the foil packs:
Lay out four large sheets of heavy-duty aluminum foil.
Divide the mixture evenly among the packets. Fold and seal the foil tightly.

Cook:

Oven: Bake for 20–25 minutes until shrimp are pink and potatoes are tender.

Grill: Cook over medium-high heat for 15–20 minutes, flipping once halfway through.

Serve:
Carefully open the foil packs (watch for steam!). Garnish with parsley and squeeze fresh lemon juice over the top.

Tip:
Add a few dashes of hot sauce or sprinkle extra Cajun seasoning for a spicy kick!
