Instructions
Preheat oven: Set oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it.
Prep potatoes: In a large bowl, toss potatoes with olive oil, garlic powder, smoked paprika, Italian seasoning, salt, and pepper.
Assemble: Spread seasoned potatoes evenly on the baking sheet. Roast for 20 minutes.
Add sausage: After 20 minutes, remove the sheet from the oven and add sausage slices. Toss everything together and return to the oven.
Finish roasting: Cook for an additional 20–25 minutes, or until potatoes are golden and crispy and sausage is browned.
Serve: Sprinkle with fresh parsley and serve hot.
Tips
For extra flavor, add sliced bell peppers and onions when adding the sausage.
Drizzle with a little balsamic glaze before serving for a tangy twist.
Leftovers make a great breakfast hash—just fry with an egg on top.
