Instructions
Preheat oven: Set to 425°F (220°C).
Prep potatoes & onions: In a large bowl, toss potatoes and onions with olive oil, garlic powder, paprika, thyme (if using), salt, and pepper until evenly coated.
Arrange on baking sheet: Spread in a single layer on a large baking sheet. Avoid overcrowding for maximum crispiness.
Bake: Roast for 25–30 minutes, flipping halfway through, until potatoes are golden and crisp, and onions are caramelized.
Serve:
Garnish with fresh parsley and serve hot.
