Oven-Baked Chicken Thighs with Potatoes

Instructions
Preheat oven: Set to 400°F (200°C).

Season potatoes: In a large bowl, toss potatoes with 2 tablespoons olive oil, garlic powder, paprika, rosemary, salt, and pepper.

Season chicken: Pat chicken dry and rub with remaining olive oil, salt, pepper, and a little extra paprika for color.

Arrange in pan: Spread potatoes on a baking sheet or in a large roasting pan. Nestle chicken thighs on top, skin-side up.

Bake:

Roast for 35–45 minutes, until chicken reaches 165°F (74°C) internal temperature and skin is crisp, and potatoes are fork-tender.

Garnish & serve: Sprinkle with fresh parsley before serving.
